At Zaaffran we serve similar cuisine but we ensure that the flavours are well-balanced and that the presentation is contemporary. We believe that food should not only please the palate but also the eyes.'

Subsequently Zaaffran's mission took shape - to prove that Indian cuisine can be as subtle and finely balanced as any of the world's greatest cuisines.

Vikrant says 'We chose the name Zaaffran (meaning saffron) because it is the world's most valuable spice. (Zaaffran may also be spelt as zafran zaaffron zaffron zaafron zafron zaffran zaafran). Our menu which changes frequently does have some traditional favourites but our emphasis is on rare and treasured recipes gleaned from royal households not from commercial kitchens.'
